if we can't digest cellulose, how can we digest spinach as it is also a type of a plant??

The truth is that when our ancestors were starving, some of them did infact eat the wild grasses of their land, I have heard of people making nettle soups here in Ireland, even still. Think about this, a dogs eat grass to improve digestion, treat intestinal worms, or fulfil some unmet nutritional need, including the need for fibre. Is it possible that our ancestors were just attempting to get rid of parasites, or improve digestion with the inclusion of more fibre.

The issue is however that the modern day Humans are unable to digest cellulose because we do not have the appropriate enzymes to breakdown the beta acetal linkages are lacking. Why has this occurred? Probably due to evolution and behavioural changes > Pizza or Grass for dinner? See what I mean.

It is possible that some of our ancestors experienced stomach cramps and bloating, something similar to people with a gluten intolerance these days, we do not have the enzymes to break down such a complex molecule.

I’ve never tried eating grass, and unless it was grown by myself I wouldn’t attempt to. The amount of fertilisers and chemicals added to fields and gardens these days, you would be safer sticking to your spinach and other cruciferous vegetables.

We don't digest cellulose (or lignin) from any leaf or any plant. Fortunately many plants contain other things that we can digest. We can extract certain nutrients from them.

If you eat grass, and chew it thoroughly, what comes out of your ‘other end’ will be just like thoroughly chewed spinach. The cellulose goes straight through our digestive tract and out. The difference is that there is very little that our bodies can extract from grass, and there is relatively more you can extract from spinach. You can eat all the grass you want, and you won’t get anything from it.

Cellulose is the main component in the dietary fiber that we are always being urged to have in our diets.
