If we soak a seed in water for some time and then expose it to
air, it sprouts into a baby plant. If this baby plant is not sowed
into the soil, it dies. Why do you think that happens?

when the seed is immersed in water, it observes adequate water for next few minutes or so and therefore when exposed to air, it grows into a plant. but when it isn't sown in soil, it doesn't receive water for further growth and therefore it dies.
