see when we cook vegetables, and add salt, while cooking, the liquid present in the food, mixes with salt and form salt solution.
Salt solution is a concentrated solution. That means the solution around the vegetables is concentrated. So to dilute the solution, the vegetables lose its water by the the process called OSMOSIS. The type of osmosis when a substance loses water is called as ENDOSMOSIS.
REMEMBER THAT OSMOSIS TAKES PLACE ONLY IN LIVING CELLS, THAT MEANS IF YOU ARE COOKING VEGETABLES, ENDOSMOSIS WILL TAKE PLACE ONLY DURING THE STARTING, BEACUSE AFTER SOME TIME, THE CELLS WILL GET KILLED BY THE INCREASING HEAT.
