After adding salt, water comes out.
If the medium has a lower concentration of water than the cell, meaning that it is very concentrated ,the cell will lose water by osmosis. Therefore the cell will shrink.

When we add salt to the water, it prevents water from going inside the vegetables. The process is called Osmosis.
