If you are provided with some vegetables to cook, generally​ add salt to Vegetables during cooking process.what would happen after adding salt? what mechanism is responsible for this

After adding salt, water comes out.
If the medium has a lower concentration of water than the cell, meaning that it is very concentrated ,the cell will lose water by osmosis. Therefore the cell will shrink.

When we add salt to the water, it prevents water from going inside the vegetables. The process is called Osmosis. 


Definition of Osmosis:

Osmosis is defined as a process when water molecules go from a less concentrated region to a more concentrated region across a semi-permeable membrane. 


When you add salt, the outside environments become more concentrated and hence will prevent water from crossing the peel of the vegetables and going inside.
