If you are provided with some vegetables to cook, we generally add salt to the vegetables

during cooking process. After adding salt, vegetables release water. What mechanism is

responsible for this?

Answer:

this is due to the process of exosmosis...

Explanation:

After the addition of salt...the concentration of salt outside the vegetables increases and water becomes less as compared to outside..and the amount of water inside the vegetables remains same. due to this imbalance In tonicity water moves from its higher concentration to its lower concentration..i.e from vegetables to outside
