If you are provided with some vegetables to cook,you generally add salt into the vegetables during cooking process.After adding salt vegetables release water.what mechanism is responsible for this?

The mechanism responsible for this effect is osmosis.

Osmsis: movement if water from its higher concentration to its lower concenttration,through a semi permeable membrane.

Here concentration of water is more the cells of the vegetable, compared to outside environment. On addig salt concentration of water decreses,which leads to exosmosis from the vegetable cell.
