If you are provided with some vegetables to cook, you generally add salt into the vegetables during cooking process. After adding salt, vegetables release water. What mechanism is responsible for this? Explain.

This phenomenon of release of water is known as OSMOSIS,it is due to higher ion concentration at the surface than exists deep within the cells. To equalize the concentration levels, the water within the cells is drawn out through the permeable cell walls.
