if you are provided with some vegetables to cook you generally add salt into vegetable during cooking process. after this water releases. what is machamism is responsible for this?

Salt is added to water in which the vegetables are boiled. (Also for taste)
This reduces the boiling point of water.
When the boiling point is decreased vegetables can be boiled efficiently and also for a longer period of time.
