if you are provided with some vegetables to cook. You generally add salt
into the vegetables during cooking process. After adding salt, vegetables
release water. What mechanism is responsible for this?

Adding salt causes hypertonic soution ie,solute concentration is higher in solution.

So water moves from vegetables to the salt water.

The cells get plasmolysed(water moves out  fthe cell and the cell membrane of a palnt cell shirnks away from it's cell wall)..

This process is called Plamolysis.
