While doing cooking, generally we add salt to vegetables ( contains water).
Adding salt, makes the concentration of salt higher in outside membrane of vegetables than in inside. ( more salt, less water)
As a result, due the process of OSMOSIS, water from vegetables comes outside making it softer and helps in faster cooking.

Answer:Osmosis/Diffusion of water
Explanation:
Usually when we cook we add certain amount of salt(which does not contain much water ) to the vegetables(which has high amount of water)
What is osmosis?
Answer:
The prices in which water molecules from higher concentration to lower concentration is called OSMOSIS.
So due to the process of osmosis they release water to make it a equalized or isotonic solution.
