if you are provided with some vegetables to look you generally add salt into vegetables during cooking process after adding salt, vegetables release water? what mechanism is responsible for this?

the mechanism is osmosis. Because when the vegetable is kept in hypertonic solution (salt) the water concentration inside the cell is more so the vegetable releases water.
