if you arr provided with some vegetables to cook . you generally added salt into the vegetables during cooking process. after adding the salt,vegetables release water. what mechanism is responsible for this...

It's due to the process of "OSMOSIS", water from vegetables comes outside making it softer and helps in faster cooking
