The salivary amylase will gradually digest the starch in the bread and turn it into smaller sugar (glucose) molecules and it tastes sweet when chewed for long time. Because whenwe chew a piece of bread for a long time it mix with saliva has saliva has some sweet taste. So we feel taste sweet.
