Adding more edges makes the shapes you can make less restrictive. Yes you can get closer to approximating a circle but you can also get closer to approximating any other shape. Keep in mind that

1) Angles can be negative (unless you want a convex polygon)

2) Setting an angle to 0 is like having one less edge, so it clearly gives us more options.
