If you're provided with some vegetables to cook. You generally add salt into the vegetables during cooking process. after adding salt,vegetables release water. what mechanism is responsible for this?​

It is a process of osmosis where liquid moves from the salt present in lower concentration to the salt present in higher concentration. Addition of salt to vegetables while cooking increases the salt concentration outside the vegetables.
