when copper sulphate is heated for some time, the blue colour disappears and it becomes white-gray in colour. This is because the water molecules are lost on heating and copper sulphate pentahydrate is converted to anhydrous copper sulphate.

copper sulphate is a good indicator of moisture. Whenever copper sulphate comes in contact with moisture or water it turns to blue. Since air has humidity and moisture copper sulphate remains blue. But when we start heating it loses its water of crystallization and turns to white. This is called as anhydrous copper sulphate. But if it again comes in contact with water it will turn blue.
