=>> Saturated fats get easily converted to their acetates i.e esters, which leads to formation of cholesterol, which forms clumps in the arteries. This leads to constriction of arteries, called as arteriosclerosis which leads to reduced blood flow and further leads to heart problems.

Unsaturated fatty acids do not form cholesterol and hence are more healthy.
