in a bakery baking powder was not added while properly cake the cake obtained
was hard and smaller in size what is reason for this

backing powder when mixed with water or heated undergoes thermal decomposition.during the process co2 is produced which causes the cake to rise and make it soft and fluffy. baking powder was not added while properly cake the cake obtained  would be hard and smaller in size.

Baking powder is basic in nature. It is used in making bakery product. For making the product soft ,spongy,and fluffy. But in above case it is not added properly so the cake is hard and small in size.
