In a laboratory thermometer why should the bulb be dipped in the liquid for which the temperature is measured?

While using a Mercury thermometer we must remember that Mercury is a metal and metal expand with high rate if exposed to high temperature.In that case if thermometer is dipped ina very hot liquid ,it will expand the limit of glass tube !Thus creating high temperature in it.
