An amoeba is a single celled organism, which means that its life processes are way simpler than that of a human being. It has a single thin cell membrane which helps in respiration through diffusion easily.
The human body has stratified squamous epithelium all over the covering of its body, which means that there are several layers of cells above the organs of our body. So by the time oxygen gets diffused through this thick layers of cells, our organs would not be able to survive.
diffusion does happen during respiration in human beings too, alveoli present in the lungs diffuse oxygen into the blood stream and even when this oxygen is transported to the various cells of our body, it reaches every cell by diffusion.
