In the experiment of taking a test tube with powdered bread and adding saliva in it, the result will be color change of the solution because of the addition of sugar converted from starch.

Actually, the starch molecules are broken down by the enzyme amylase of saliva and the broken down molecules into small parts are generally sugar molecules.

In this experiment the solution of the saliva contains an enzyme named as "Salivary Amylase" and pieces of powdered bread contains "Starch".With the help of amylase the added saliva breaks down the starch and converts the starch in comparatively small sugar molecules. And once the conversion completed the colour changes back.
