In human beings, digestion of carbohydrates starts from the mouth. 25–30%  of it is digested in the mouth.

Reason:

  • In the buccal cavity, about 25–30% of carbohydrates (polysaccharides) are broken down or transformed into disaccharides (maltose).
  • The small intestine of the human alimentary canal completes the remaining stages of carbohydrate digestion.

Minor digestion:

  • The salivary amylase (ptyalin, or alpha-amylase) and lingual lipase, both found in saliva, are the only chemically digested substances in the mouth.
  • With a pH range of 6.7 to 7.0, salivary amylase, which is chemically identical to pancreatic amylase, breaks down starch into maltose and maltotriose.
