Pasteurization is a process, innovated by Louis Pasteur to kill the harmful bacteria that are present in milk by heating the milk up to a specific temperature for a specific period of time.
Pasteurization techniques are used in food industries to reduce the pathogens and also for long shelf life of milk and food products.
There are 2 industrial methods of pasteurization:
1. HTST – Also called as high-temperature, short-time technique. The Milk in pipes that are heated outside by hot water is heated up to 72 degrees C for 15 seconds.
2. UHT – Ultra heat treating technique. The Milk is heated up to 140 degrees C for 4 seconds. This allows storing milk for long time periods.
3. At home, according to the FDA, milk has to be heated at 63 degrees C for 30 minutes for it to be pasteurized.
