it's just some denotation that has been taken as convention to denote displacement as s usually

Usually speed doesn't require to be given a denotion, because it's just the magnitude of the velocity that is without the direction, now generally u or v is taken for velocity and so |v| or |u| is taken as the denotion for speed.

You can denote displacement or speed as anything you like or any letter you like as far as it doesn't confuse with any other physical quantity in the same sum or same problem.

S= Distance traveled in the t seconds

u= Initial velocity of the motion

a= acceleration or retardation of the motion
