Pistilate flower means it only has female reproductive organ present.

emasculation is done in those plants which have both male and female reproductive organs.

emasculation means removal of stamens from the flower which have both male and female reproductive organs.

Bagging is done so that pollen from other undesirable plant do not fertilise the pistilate flower.
