● What happens if anaerobic conditions are not met during wine making -
- Wine is made by fermentation of ripened grapes.
- In this process, sugar is acted upon by anaerobic enzymes to form ethanol & CO2.
C6H12O6 + enzymes --> 2C2H5OH + 2CO2
- Fermentation requires anaerobic conditions, and it won't occur if these conditions are not met.
- In presence of oxygen, glucose is converted into CO2 & water with release of 38 ATP.
C612O6 + 6O2 --> 6H2O + 6CO2 + 38 ATP
