the main reason is:

1. if we consider the projectile as a whole, it is very difficult to find the equation of motion .But if we resolve the velocity vector then, we can consider the projectile as a combination of 2 linear motions.

2. For example: It helps us to understand the concept of motion if we throw a stone upwards out of a train moving. we are giving 2 perpendicular velocity, but the resultant is projectile.
