during cold,water changes into ice & ice is larger than being in water ..so water in pipe freezes during cold and it converts into ice which is larger than water which pressures on pipe..and pipe burst .

Becos it turns to ice and that ice expands and put pressure on the pipe and bursts it. so to avoid this s*#t they cover the pipes with sawdust and animal dung
