In the definition of calorie
The amount of heat required to raise the temp of 1gm of water from 14.5℃ to 15.5℃
Why do we calculate only from 14.5 to 15.5
Please clarify fast

It is only a standard value there is no any certain reason.
One may also ask why atomic mass is a unit of mass used to express atomic and molecular weights, equal to one twelfth of the mass of an atom of carbon-12,and not of any other element or why we consider the speed of light as 299792458m/s only in vacuum. Can you clarify this.
