Bro we have solve chemical equation by balancing them. In first reactant Na has 2 molecule so when product is formed then we have balance it. So by process of balancing equation we have to balance the equation. This process is used in hcl also we know that h2o formed & h has 2 molecule in product so in reactant we have to put 2 in hcl to balance them.
In second equation h20 also formed & but see in reactant there are present 2 molecule of h
first in NaHCO3 & second in HCl. These os why that in second equation there are not 2HCl.
I hope its helpfull for you.
IF IT HELPFULL FOR YOU THAN MARK AS A BRAINLIST.
THANK YOU.

See on the LHS
It is 2HCl
On RHS it is 2NaCl.......That means Cl is 2
And H is also 2
If we add them we will get 2HCl
