sap can be converted into Jaggery sweet as honey itself. Most tapped palm trees gives a sap very rich in sugar (10 to 20%).The art of tapping a Caryotaurens flower is very much a village craft requiring a a big earthen pot is placed at the end of the flower to collect the sap.
