In volta's pile why would copper not form copper sulphate ?

This would allow us not only to copper a reaction, as in Nicholson and Carlisle's electrolysis, but copper to create an electric current as in Volta's pile

The ox-gullet tube was filled with sulfuric acid solution. Copper sulfate crystals were piled on the perforated copper disc to keep the solution saturated.
