In Western culture, we can nod our heads up-and-down for "yes" and shake them left-and-right for "no". Does Chinese have anything similar, or do they do the same thing? Are there other gestures for "yes" and "no"?

yes, predominately, we do nod or heads to say yes. we shake our heads side to side to say no. sometimes we also say yes and no in chinese, which is:
yes: 是 / you pronounce it like: Shì
not: 不 / you pronounce it like: Bù
no: 没有 / you pronounce it like: Méiyǒu/ 没有 is normally used for ''don't have'' because 有 is has.
