In starch digestion is initiated in the mouth ( buccal cavity) itself. And mechanical digestion of starch takes place by teeth, tongue and even by the three pairs of salivary glands which release enzyme ptyalin or salivary amylase. This enzyme ptyalin digests starch and converts it into maltose.
