in winter season spoilage of food items are observed in maximum
due to the increase in the moisture content of air , facilitation for the growth of fungus and other microbes increases.
with respect to some microbes like lactobacillus the activity decreases due to low temperature ( curdling of milk doesn't take place or maybe too slow )
however there are examples of fungal growth during winter due to moisture which causes high toxication of food.

hope this helps you !...
