Industrial microbiology includes the use of microorganisms to manufacture food or industrial products in large quantities.
The commercial production of penicillin and other antibiotics are the most dramatic in industrial microbiology.
Advancements in industrial microbiology and chemical purification have permitted the isolation of enzymes in commercial quantities. Their use is now commonplace in many industries, including wine production. Filamentous fungi, notably Aspergillus and Trichoderma spp., are the primary sources of those authorized for wine use. They are active within the pH range and SO2 conditions found in wine.
Microbial metabolites can be used in industrial microbiology to obtain amino acids, to develop vaccines and antibiotics, and to isolate chemicals necessary for organic synthesis.
