Alhamdulillah” means “all praise is due to God”. At the time it was recited, Muhammad SAW was meant to say “all praise is due to God”, that was what Allah told him to say. If Allah said “all praise is due to me”, and Muhammad recited “all praise is due to me”, Muslims would start worshipping Muhammad, like Christians started worshipping Jesus. That's why Allah begins with “all praise is due to God” instead of “all praise is due to me", there wouldn't be the same mistake twice. You have to keep in mind that someone else will be reciting what you are saying, so you should be a bit more specific. This was one of the first Surah in the Quran so people were still learning about Islam at the time, imagine if Muhammad started by saying “all praise is due to me”.
