Try starting by researching industry standard models, like the ones in the "The Data Model Resource Book" series by Len Silverston.
It also depends on the size of your organisation. You may be able to buy something off the shelf rather than have to build it from scratch. For example, the business versions of financial systems for small businesses (i.e. MYOB, Quicken, QuickBooks) include basic inventory systems. If you are larger, there will be other, more sophisticated CotS products available to you.
