is butter an emulsion or gel?it is given as an example of both emulsion and gel in the ncert text book . which answer must we taken?

This is because it can be dispersed in either fat or liquid. Butter in solid (fat) form is referred to as gel colloid. While in its liquid form it is emulsioncolloid. When dispersed material liquid droplets (milk) dispersed in solid (fat) called Butter asemulsion.

It depends on which state butter is present.

In liquified butter it act as emulsion(water in oil)

When this butter gets solidified it act as gel( liquid in solid)
