Glycerol is a nontoxic, sweet tasting, and viscous fluid that has the chemical formula C3H8O3. It is a polyol, a compound that is made up of more than one hydroxyl group.

It is a kind of alcohol formed during saponification.
The reaction thaking place is as follows
Sodium/potassium+ ester - - - - > sodium/potassiumsalts of fatty acid + glycerol (alcohol)
This reaction is known as saponification. This alcohol is obtained from the ester which is formed by combination of carboxylic acid and alcohol (e. G. Ethyl ethanoate) it reacts with sodium or potassium to form sodium or potassium ethanoate along with glycerol. Hope this helps
