ice cream is made by churning a mixture of milk, sugar, flavours. this mixture is slowly chilled to from ice cream. the churning process disperses air bubbles into the mixture by foaming and breakup the large ice crystals into tiny particles. the result is a complex substance which contains solids ( milk fats and proteins) and liquid ( water) and gas ( air bubbles)
