Well, it is not completely true.

A new species is formed gradually due to genetic and environmental changes to suit the new situations, environment, and for adaptability. As a part of their survival mode, the species keep changing via tiny variations at the individual level. When these reproduce successfully in a changed environment, the survival chances of these changes from the older ones keep enhancing.

However, there is also the concept of 'Mass extinction', where a certain species of animals became extinct in a blink. The main examples are - the Dinosaurs, also known as the Permian-Triassic extinction; the late Devonian extinction; and the Ordovician-Silurian extinction.
