Well, the universe we live in is made up of elements and is found to be programmed such that these elements make up the many substances in the world around us.
So.... basically.... we find through experience and years of study (typical way any intelligent species would learn)
that when we heat something( say liquid, like water) it starts boiling....
then some super genius guy found it was because the molecules of water started vibrating more rapidly (increased kinetic energy) with increase in temperature which resulted in the water molecules to change phase from liquid water to steam....
Let me lay it out for you....
All the substances around us, i.e the compounds are dominated mainly by two principle forces...(let alone other forces like gravity and electrical interactions)
- inter molecular force: which brings the atoms of the compund closer...
- thermal forces: which impart kinetic energy by disturbing the inter molecular forces and hence bring the atoms of the compound apart.(mainly due to vibratory motion)
Now.. in any situation.... the phase(state) of a substance is dependent on which of these two forces are dominant...

Yes... KE possesd by the particles of matter is significantly affected by heat...
because at any instant of time the atoms of all matter are in vibratory motion in their local lattices... and more energy(thermal energy) given to them will increase this vibratory motion thereby increasing the kinetic energy....
Only at a temperature of absolute 0.... will the particles of any compound posses no kinetic energy....
