It is true that nitrogen acts as an antioxidant and prevents rancidity and it is because, it is almost inert in nature at room temperature

and a huge energy is required to break the triple bond between the dinitrogen (N ) molecule, so it does not act with oxygen and

prevents rancidity in food products.
