Pigeon pea. ... Similar to other legumes, pigeon pea protein is deficient in sulfur-containing amino acids (methionine and cystine) and contains a surplus of lysine (limiting amino acid in cereals). Pigeon peagerm (embryo) is nutritionally better in terms of amino acids composition than that of the cotyledons.
