Smell is not considered as matter, because it is just one of the 5 human senses. Also, it is just the odor of a substance, which could be classified as matter.

Smell:

The word smell can be used in two different ways, one for the sense of smell by sensory organs present in living organisms and other for the particular odor of a substance.

The sense of smell is not a form of matter as it is the ability of a living organism to detect what a particular substance is using its sensory organs whereas odor is a property of a substance, property of the composition of a substance, and its molecules.

So, the odor of the substance is considered as a form of matter.
