Soap is a mixture of compounds, The compounds are mainly the sodium salts of several long chain fatty acids. which are usually obtained by the hydrolysis of plant and animal oils/fats.

Some of these slats in soap are sodium palmitate, sodium stearate, sodium oleate, etc. The key to the soapiness of the compounds is the long hydrocarbon chain with carboxylate ion at one end. The negative charge on carboxylate ion is neutralized by the positive sodium or some times by potassium ions.
