Not sure but it’s important you scope out what you decide and deliver something working at the end. No point developing a bigger project if you can’t complete in time. So, for example, say you develop an e-commerce website. You don’t say how much time you have but in my exp they want something reasonably complete with decent coding style. What the actual application is does not matter as much it’s more can you deliver something working by the end. I did a school registration website once in a class I took. It was a lot of work. You have to create a student record and then select your classes and have a schedule with your classes etc.

We did not get to choose the project. It was assigned day 1 of the 4 month course and had til the end of course to deliver it.

My sugg is start early and focus on scope and completing it within the time frame allowed. Deliver a working application at the end.

Could have a school registration with courses to select.

Could have an Amazon knockoff.

I expect you need DB interaction. Anything where you create an appt and have a list of services. My hair place (www.rucurious.ca) has an online booking for appts that is fairly straightforward.
