• This is basically a reflex action done by Brain when it gets the signal of bacterial activity or if too much food is forced down at once. Try swallowing large amount of food at once.

• When this is done, Brain sends a signal to the muscles, which turns the direction of peristalsis.

• This forces the food upwards instead downwards.

• This is why food moves upwards instead of downwards.
