There is no reason not to cook any of these vegetables. Typically radishes and cucumbers are considered salad vegetables and served raw, but they can be cooked in the same way as other vegetables, such as roasting, sauteing, steaming etc. Carrots are also commonly served raw in salads or as snacking veggies, but are also very commonly eaten cooked, as in soups, stews or, of course, carrot cake! All vegetables will lose some vitamin content when cooked, but often gain in digestibility (potatoes, for example, should never be eaten raw.)
